Reheating pizza so the bottom comes back

Reheated pizza fails in one specific place: the bottom. The cheese comes back fine, the toppings come back fine, and the base arrives limp and faintly damp. Fix the base and you've fixed reheated pizza.

What went wrong in the fridge

Two things happened overnight. Moisture from the sauce and the cheese migrated down into the crumb, and the starch in the crust retrograded . The gelatinised starch molecules recrystallised as they cooled, which is the same process that makes day-old bread firm and dry.

Retrogradation is reversible with heat. The moisture isn't: it has to be driven off. That's why a microwave produces the worst possible result. It heats the water directly, turns it to steam inside the crumb, and gives it nowhere to go. You get a base that's hot, floppy and then leathery within a minute of coming out.

The skillet method

The best result, and it takes about five minutes.

Put a slice in a dry non-stick or cast iron pan over medium-low heat. No oil. Let it go for four or five minutes until the base is hot and audibly crisp when you tap it, lift a corner and look for colour rather than guessing.

Then add two or three drops of water to the pan, well away from the slice, and put a lid on for about a minute. The water flashes to steam, the steam melts the cheese from above, and because the pan floor stays dry and hot the base keeps crisping while the top rehydrates. Lid off, ten more seconds, done.

That combination is the whole trick: dry conductive heat below, brief steam above. Nothing else does both at once.

The air fryer method

Faster and nearly as good. Around 350°F for three to four minutes, straight on the basket or crisper plate so air reaches the underside.

The failure mode here's drying the cheese out, because the same aggressive airflow that crisps the base also strips moisture from the top. Check at three minutes. Thin slices can be done at two and a half.

For a whole reheated pizza this is the wrong tool . The basket is too small and the outer slices cook faster than the middle. One or two slices is what it's good at.

The oven method

For more than three slices, use the oven, and put the pizza on a preheated surface. A pizza steel or stone that has been in a 400°F oven for twenty minutes will crisp a base in about five. Cold steel or a cold baking sheet won't; the base sits there absorbing heat slowly while the toppings overcook above it.

No stone? Preheat a heavy baking sheet upside down and slide the slices onto that. It isn't as good but it beats putting them on a cold tray.

The one thing not to do

Don't cover pizza with foil in the oven. It's standard advice for reheating most things and it's wrong here, foil traps the moisture you're trying to evaporate and guarantees a soft base.

Storage matters more than reheating

How you store it sets a ceiling on how good the reheat can be. Stacking slices means the hot ones steam each other and the cheese fuses into one mass. Instead, lay slices flat in a single layer, with parchment between layers if you've to stack, in an airtight container.

Never store pizza in the cardboard box in the fridge. The cardboard absorbs oil from the base and holds humidity around it, which is the worst combination available.

Cold pizza is legitimate

cold pizza straight from the fridge is a different food, and a good one. The fat is solid, the cheese is firm, the flavours are muted and salty. If you like it, you aren't doing anything wrong, and no reheating method is going to improve on it for you.

The short version

  1. One or two slices: dry skillet, medium-low, five minutes, then a few drops of water under a lid for one.
  2. Speed: air fryer at 350°F for three to four minutes.
  3. Several slices: oven at 400°F on a fully preheated stone or steel.
  4. Never the microwave. Never covered in foil.
  5. Store flat, out of the box, in an airtight container.
